Apple Rose Cakes

Little apple rose cakes


Quick and tasty

To make 6, you will need:

  • 1 roll puff pastry from the fridge
  • 100 g blanched, ground almonds
  • 75 g sugar
  • 1 egg
  • 4 tablespoons of butter (runny and slightly cooled)
  • Pinch of salt
  • 2 medium-sized organic apples
  • Lemon juice (fresh or from concentrate)
  • 1 muffin tin
  • Butter for greasing

And here's how to make it:


  • Pre-heat the oven to 190°C. If using a fan oven, 170°C will be enough.
  • Grease 6 muffin moulds in the muffin tin with the butter.
  • Take the puff pastry out of the fridge and leave it to reach room temperature for about 30 minutes. Then roll it out!
  • Fill a bowl with cold water and add several squirts of lemon juice.

For the almond filling:

  • Blend the ground almonds, sugar, salt, egg and liquid butter into a creamy consistency using a hand mixer (beater).

For the apple filling:

  • Wash and core the apples and cut them into slices 2 mm thick.
  • Place the apple slices into a bowl containing cold water and lemon juice.
  • Place the apple slices into a microwave-safe container and heat them in a microwave at 600 W until the slices soften. It is important that the apple slices are soft enough that they can be rolled out easily later on. This can take between 2 and 6 minutes. I set the microwave to 2 minutes to begin with and then extend it in 1-minute intervals until the apple slices are soft enough.

Now it really gets going:

  • Unroll the puff pastry and cut it into six strips
  • Place the almond filling in the centre of the strips.
  • Lay the apple slices on the upper half of the almond filling. The slices should overlap at this point. They should protrude over the pastry slightly at the top edge, but should not extend over the centre point of the pastry at the bottom. Take a look at the picture for a guide.
  • Fold the bottom halves up over the apple slices and press down lightly.
  • Now roll up the pastry strips and place them into the muffin moulds with the apple slices facing upwards.
  • Then place the tin into the oven and bake for around 40 minutes. In my oven, I have to put baking paper on top of the cakes after 25-30 minutes so that they don't get too brown.
  • Remove the tin from the oven and leave it to cool.
  • Garnish with icing sugar before serving.
