When harvesting, you should not break off the vegetable. It is better to cut it off including its stalk. Within three to four weeks some smaller side shoots will grow and can be harvested as well. Not all broccoli types can be harvested multiple times, only “Calabrese”, “Summer Purple” or “Penta”.
To protect the vitamins and nutrients during the cooking process, you should prepare broccoli gently. Best is to steam it in a steamer or in a covered pot with little liquid.
