There is nothing quite like a warming potato soup in winter. We've got a particularly green recipe for you, which you can prepare easily and quickly even after a long day at work.
This potato soup based on Grandma's traditional recipe is very easy to prepare. For this hearty power pack, all you need is a colourful bunch of vegetables. You probably already have a lot of the ingredients in your healthy kitchen. If not, write the following down on your shopping list:
First peel and wash the potatoes and carrots. Then dice the potatoes into bite-sized chunks and slice the carrots. While you peel and dice the onion, you can thaw the peas. So far, so good. Now the "hot phase” begins: heat the chopped vegetables in a pot with lard and season it with salt, pepper and bay leaves. Then place the green bouquet garni in the broth and add the washed parsley stems. Tip: Pull off some leaves for garnishing the soup at the end.
After about 15 minutes, put aside about two tablespoons of the cooked vegetables. This is used as a garnish later. Let the remaining soup simmer for another ten minutes. Ready? Then, remove the bay leaf and parsley stalks and mash the potato soup. Finally blend in the whipped cream, put back the vegetables and serve up as a hearty meal together with crème fraîche and some parsley leaves. That was easy, wasn't it?
