Beetroot smoothie – three bitter-sweet variations

Rich, earthy beetroot and sweet fruit or vegetables – do they go together? Absolutely! In the beetroot smoothie, opposing ingredients combine to create a harmonious ensemble of flavours. We have three delicious recipes for you.

Beetroot smoothie – recipe with carrot juice

These red bulbs are a fantastic energiser in the winter. Their colour alone radiates positivity and energy. Incidentally, betanin is responsible for this colour. And they don't just look good, they are healthy, too. Beetroot protects our cells and blood vessels. They also contain vitamin B, folic acid, potassium and iron. Plenty of reasons to include beetroot in your diet! You can prepare a sweet, earthy beetroot smoothie using carrot juice and honey.

For one portion, you will need:

  • 100 grams of pre-cooked beetroot (or beetroot from a jar)
  • 100 grams of carrot juice
  • 1 tablespoon of clear honey
  • 1 tablespoon of olive oil
  • A pinch of salt and a pinch of pepper

Preparing this smoothie is unbelievably easy: Place all the ingredients in a bowl and purée the mixture until it reaches the desired consistency. Add salt and pepper to taste and then enjoy your healthy juice.

Beetroot smoothie – recipe with blueberries

If you like experimenting, then try this recipe containing blueberries. It also features dates and vanilla. Here are all the ingredients you need — this will be enough for two glasses:

  • 100 grams of peeled beetroot
  • Half a vanilla pod
  • 150 grams of frozen blueberries
  • 3 dried, stoned dates
  • 300 millilitres of almond milk

First, chop the beetroot into small pieces using a vegetable slicer. Chop the dates into small pieces and scrape the pulp out of the vanilla pod. It's best to use a sharp knife to do this. Now add the ingredients, along with the blueberries, to a tall mixing bowl and purée them. Alternatively, you can use a blender. Strain the mixture through a sieve to remove any large pieces and pour the beetroot smoothie into glasses – done.

Beetroot smoothie with mango and ginger

There are no limits to the range of variations you can try. For example, beetroot also goes really well with hot, spicy ginger and sweet mango flesh.

You will need the following ingredients for four glasses:

  • 800 grams of beetroot
  • 1 ripe mango (500 grams)
  • 40 grams of fresh ginger
  • 4 tablespoons of lemon juice
  • 100 grams of crushed ice
  • Salt

Wash the beetroot and cut it into large cubes. Chop the ginger into pieces. Before doing anything else with the ingredients, extract the juice from them. Peel the mango, remove the stone and cut the flesh into large pieces. Finally, place the various components in a tall receptacle, along with the rest of the ingredients, and purée them. Enjoy your invigorating drink!
